

La Bécasse is the second restaurant in the 10 in 8 Group's collection which includes some of the finest dining establishments in the UK, a luxury boutique hotel, The Fine Dining Academy Cookery School and Les Caveaux, a fine foods, wine and spirits club.
Originally built in 1878 in Paris, at the end of the 19th Century the timber framed building was dismantled and shipped piece by piece to its current home in the stunning 22 acre deer park on The Duke of Bedford's Estate in Bedfordshire.
After a colourful culinary history, Alan Murchison purchased Paris House at the end of 2009 and the new Paris House opened on the 10th February 2010. Paris House blends modern culinary techniques with traditional foods and the "retro” menus are designed to evoke memories of the past. The restaurant was awarded a prestigious Michelin-star in January 2011.

Hotel TerraVina, New Forest
Hotel TerraVina is the vision of Gerard Basset OBE, co-founder of Hotel du Vin, and his wife Nina, Managing Director of 10 in 8 and one of the few successful female hoteliers in the UK. The couple have created their ideal hotel, a testament to chic hotel design, in their beloved New Forest. Hotel TerraVina merged with the 10 in 8 Group in May 2012 to enhance the strategy of both brands.

The Fine Dining Academy Cookery School, Berkshire
At this cookery school with a difference guests are taught the creative and technical skills required to prepare and deliver a fine-dining experience at home. The Chefs running these fully hands on courses are some of the UK’s top talent including Michelin Starred Chefs Alan Murchison (L'ortolan), Will Holland (La Becasse Ludlow), Phil Fanning (Paris House) and other guest chefs, each at the pinnacle of their career.
Our chefs offer a variety of courses suited to all levels of experience, whether a beginner, an enthusiast or a professional chef. All our courses are one day long, hands on and take place in our fully equiped cookery school kitchen. The experience culminates in a delicious feast of your own making being served in our beautifully styled country dining room. Service staff and lashings of laughter and wine will ensure it’s a truly memorable experience.
In addition to the day to day running of the cookery school the Academy also coaches new talent to become proficient restaurateurs capable of running a financially viable fine-dining experience. Coaching includes financial management, marketing, sales and business development, strategic thinking and tactical development.
Rising Stars spend time in each of the Group’s restaurants honing their skills and ultimately, if good enough, get given their own restaurant to run and develop with enough freedom to express their own individualism and personality.
